An energy ball is, to me, the most concentrated and elegant form of functional nutrition: no cooking, no compromise. Raw ingredients, blended, rolled, ready. Each ball is a micro-meal that carries in one go what a whole meal sometimes struggles to deliver — complete protein, good fats, adaptogens, antioxidants, assimilable minerals. I think here like an engineer: each ingredient solves a problem posed by another, exactly as in hummus.
Ingredients
- The base: 180 g fresh gourmet Jurassic Fruit dates, pitted — they are what changes everything: the silkiness, the purity, the living energy
- The body: 80 to 90 g of nuts/seeds (purée or pieces), chosen by the direction below
- Soft direction: lucuma, coconut, white sesame, cashew, raw cacao butter, freeze-dried mango
- Middle direction: almond purée, lucuma, saffron, goji berries, freeze-dried durian (Biovie)
- Strong direction: raw cacao, black sesame, cacao nibs, rhodiola, hericium (lion's mane), guarana
- Always: 1 good pinch of fleur de sel. Optionally, a touch of raw honey — delicious, but stickier, to dose lightly
- To coat: raw cacao, grated coconut, lucuma, matcha, sesame or freeze-dried fruit powder
Method
I blend the fresh dates into a supple paste — they are the base and the binder, and they alone give that silkiness. I fold in the nut, the fleur de sel, then the actives of the chosen direction. If I add raw cacao, I melt it separately in a very gentle bain-marie (≤ 42 °C), never beyond — beyond, the polyphenols degrade and the enzymes die. I take portions of 12 to 15 g, roll them into balls between the palms, then in the coating. Half an hour in the cold so they hold, and I take them out ten minutes before serving.
Fresh dates, my base
Everything starts from the fresh date, and each variety has its genius. The Medjool, wide and melting, gives caramel and softness. The Mazafati, dark and moist, brings an almost chocolatey depth. Jurassic Fruit's gourmet varieties, picked fresh, keep a living water that makes the bite silky and pure — without the dry, set quality of long-keeping dates. It is the date, not sugar or honey, that carries the sweetness here: honey I reserve for my augmented honeys, where it reigns supreme. An energy ball of fresh dates is alive: it keeps 24 to 48 hours chilled, and that is exactly right.
A good energy ball is not a random mix: it is an architecture. The fresh date binds and elevates without refined sugar — it is the base. The nut completes the protein profile and offers the fat that makes fat-soluble compounds assimilable. Raw cacao brings its polyphenols and theobromine. The adaptogen targets a precise intention. Fleur de sel amplifies everything. This is what sets my energy balls apart from every one on the web: the depth of the why, not just the list of the what.
Raw preserves what cooking destroys
Everything is worked below 42 °C. At this temperature, the ingredients' enzymes stay alive, the heat-sensitive vitamins (C, B1, B5, B9) intact, the cacao polyphenols preserved. This is the difference between a living food, which collaborates with our digestion, and a cooked food that asks the body to rebuild everything.
Protein complementation
No single nut carries all the essential amino acids. But by pairing black sesame (rich in methionine), cashew (rich in lysine) and hemp (complete protein), I obtain a profile equivalent to that of an egg. My energy balls are intentional protein assemblies, never random blends.
Bioavailability — the nutrient is nothing without absorption
A compound that passes through the gut without being absorbed serves us nothing. Each formula builds in its vectors of assimilation: black pepper, whose piperine can amplify curcumin absorption up to twentyfold; vitamin C (lemon, camu camu) which triples that of plant iron; fats (cacao butter, coconut oil) which solubilise fat-soluble compounds; and the gentle warmth of spices (ginger, cinnamon) which supports circulation.
Beyond taste, each ball can target a precise intention. On the date base, five axes — the same that guide my bars.
Dopamine axis — Energy & Focus
The ball that lights the morning fire. The dopaminergic axis is the one of motivation, focus, vital drive.
Signature ingredients fresh-date base, raw cacao, cacao nibs, pecans, black sesame, maca, guarana, rhodiola, hericium (lion's mane), ginger, fleur de sel.
The logic raw cacao carries phenylethylamine and theobromine — a sustained stimulation, without the spike of caffeine alone. Guarana extends the drive through a slow release. Brahmi and hericium work the deep layer: they support nerve growth factor (NGF), for lasting vitality rather than a mere jolt. Black sesame is the quiet reservoir of tyrosine, the precursor of dopamine.
Serotonin axis — Serenity & Good mood
The ball that brightens the afternoon. The serotonergic axis is the one of clear mood, quiet joy, inner wellbeing.
Signature ingredients fresh-date base, blanched almond purée, lucuma, saffron, goji berries, bourbon vanilla, cardamom, fleur de sel.
The logic saffron unites three active compounds — crocins, picrocrocin, safranal — that gently support mood. Vanilla nourishes serotonin production. Lucuma sweetens without added sugar. The soaked, skinned blanched almond — the most sattvic form in Ayurveda — carries tryptophan, the precursor of serotonin. Goji berries add their antioxidant brightness.
GABA axis — Calm & Rest
The evening ball. The GABAergic axis is the one of deep calm, of the descent toward sleep.
Signature ingredients fresh-date base, black sesame, lucuma, ashwagandha, reishi (powder + extract), nutmeg, cardamom, fleur de sel.
The logic ashwagandha helps regulate cortisol. Reishi — the yin mushroom par excellence — brings triterpenes and beta-glucans, and a natural adenosine: the very molecule that builds sleep pressure through the day. Black sesame offers magnesium (a GABA cofactor) and tryptophan. Nutmeg, in a condiment dose, adds its evening softness.
Acetylcholine axis — Memory & Clarity
The strategist's ball. The cholinergic axis is the one of memory, learning, mental clarity.
Signature ingredients fresh-date base, raw Criollo cacao butter, ceremonial matcha, brahmi, hericium (extract), pistachio, cardamom, fleur de sel.
The logic matcha unites L-theanine (a calm focus, without agitation) and a gentle caffeine. Brahmi supports the cholinergic system. Hericium nourishes the neuronal growth factors (NGF, BDNF): brahmi activates, hericium strengthens the connections that benefit. Pistachio is one of the nuts richest in natural melatonin.
Regeneration axis — Antioxidant & Vitality
The ball of renewal. The regenerative axis is the one of cellular protection, vitality support, longevity.
Signature ingredients fresh-date base, spirulina (phycocyanin), moringa, aronia, maqui, lucuma, cashew purée, ginger, fleur de sel.
The logic spirulina's phycocyanin is a rare antioxidant that protects against both free radicals and inflammation — a dual action few compounds share. Aronia and maqui concentrate anthocyanins and delphinidins, guardians of collagen and vessels. Moringa brings B vitamins, iron and complete protein. Ginger and black pepper amplify the assimilation of the whole.
The making protocol
Five precise gestures, from the date base to the chill.
The date base I blend the pitted fresh dates into a supple paste — it is the binder, and the guarantee of silkiness. If I want a touch of honey, I add it here, lightly.
The cacao (strong direction) for a cacao ball, I melt the raw cacao separately, in a gentle bain-marie, 40-42 °C maximum. Beyond, the polyphenols degrade and the enzymes die.
The folding-in I fold in the nut and the fleur de sel, then the sifted functional powders of the chosen direction. Everything stays below 42 °C.
The rolling portions of 12 to 15 g, rolled between the palms, then in the coating — raw cacao, grated coconut, lucuma, matcha, maqui or black sesame.
The chill thirty minutes in the fridge so the balls hold. I take them out ten minutes before serving, to recover the full silkiness.
Two cousins extend this family.
